Food Safety and Microbiology

Unit presentation

SECALIM is a Mixt Research Unit (MRU 1014) INRA/Oniris, with 21 permanent people, specialised in microbiological quality of food. Its research is now focused on the contaminated food considered as a specific ecosystem. This contaminated food (food-ecosystem) can be considered as an « organ » potentially subjected to disruption or influenced by its environment. This involves all the elements and factors that can impact survival, growth, regulation (or disregulation), alteration capacity and virulence of microorganisms. The overall goal of SECALIM is to answer the following question : “How food environments encountered throughout the food processing chain can influence the microbial risks, especially Campylobacter risk ?”
